  1. TO UNMOLD CHEESECAKES BAKED IN SOLID PANS
  2. Cover the top of the pan with tightly stretched plastic wrap. Place a piece of cardboard or a lightweight baking sheet on top of the plastic wrap. Invert the pan and cardboard and rap the edge of the pan gently until the cheesecake is released. Remove the pan and peel off the paper liner. Place a cake circle or serving plate on the cake and carefully invert the cake so that it is right side up. Remove the plastic wrap.
